Mediterranean Quinoa Salad
A healthy and refreshing salad packed with quinoa, cucumbers, tomatoes, olives, and feta cheese, dressed in a lemon-herb vinaigrette.

Ingredients
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- For the dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the water is absorbed.
- Remove from heat and let it stand, covered, for 5 minutes. Fluff with a fork and let it cool completely.
- In a large bowl, combine the cooled quinoa, cucumber, tomatoes, olives, red onion, feta cheese, and parsley.
- In a small bowl or jar, whisk together the olive oil, lemon juice, and oregano. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
